How and why was Indian food Anglicized?

Food reflects culture, so, given the British occupation of India for an extended period of time, it is no surprise that Indian food became Anglicized.  The first Indian restaurant opened in England in 1809, bringing Indian food to the West.  There is also a distinct Portuguese impact on Indian food, especially as prepared in the West, which interacts with the British influence.
